Banana Pancakes (gluten free)

I really love the taste and texture of bread and baked goods, though I'm fully aware they are not so good for me. I think it's important to have balance and eat those things occasionally but keep it clean most of the time. This recipe is one that can help you do that. Our friend Michael from CrossFit LA was kind of enough to share this simple and yummy recipe for gluten free banana pancakes. I have made them twice and decided its time to share with everyone! They are so good they don't even need syrup!

1 banana
2 eggs
Salt, cinnamon, vanilla
1/2 t Baking powder
1 T butter or olive oil spray

1-Heat a nonstick pan over medium-low heat.
2-Mash banana and add 1 egg. Stir together until it looks like a lumpy batter. Add salt, cinnamon, vanilla, and baking powder.
3-Separate white and yolk of second egg. Reserve yolk for some other yummy purpose. Beat whites to a stiff peak.
4-Melt 1 T butter in pan.
5-Fold about 1/2-2/3 of the whites into the batter.
6-Pour batter into pan and cook until edges seem dry and tiny bubbles start to appear on top. Bottom should be golden. Flip pancakes and cook for another minute or two until cakes are firm.


Top with whatever you like!

    These sure are yummy and are a perfect way to start the day! I even forgot the baking powder and they still turned out! Perfect zone meal as well with a little bacon on the side!

  3. I'm going to make these tomorrow for my hubby and me but I was wondering if it'd be okay to use butter instead of the spray. My husband has celiac and I've noticed that most of the sprays have wheat in them.
